Cycles of the body, cycles of the earth.... Our body's have cycles, just like the earth's season's. Our magnificent organism was made to work synergistically with mother nature and functions optimally when we honor our cycles. The food's that grow seasonally and regionally are most easily utilized by our body. This doesn't mean don't eat tropical fruits, veggies or meat sources that are outside of your region...that might lead to never having fresh food for some in the Arctic Circle:) This is meant as an awareness and guideline to support optimal wellness and "eating local" so you can best utilize and get the most nutrition out of fresh food. There is something to be said for food that is picked before it is ripe and then shipped for days before it reaches your plate vs. fresh picked. Of course we all don't have the good fortune to either grow our own food or have it so fresh. The next best thing...purchase as much local foods that are in season so at least it is fresher and grows in your region or in your country.
And remember, you can create amazing soups with these veggies by adding them to our broths!
