It's almost garden season here in Colorado! I am already testing out new dishes to make with the harvest goodness. Most years I have way more zucchini than I can handle so this dish was a welcome way to put those delicious veggies to use. These fritters were so savory and filling with a tart sauce. Hope you enjoy!
Ingredients
2 shredded zucchinis
1 packet of Vitality Beyond Broth
1 egg or 1 TBSP of ground flaxseed mixed with 3 TBSP of water
1/4 cup of almond flour
2 TBSP of chopped chives
1 TBSP garlic
1/2 tspn of salt
coconut oil and avocado oil for cooking
Aioli
1/4 cup of vegan mayonnaise
2 TBSP lemon juice
Method
Mix all the ingredients besides the oil in a bowl. Heat oil in a skillet to medium heat. Spoon zucchini fritter patties into the skillet and press down. Cook until browned on each side. Mix up the mayonnaise and lemon juice and drizzle over the fritters.
