Vitality Tarte Tatin

1 Puff pastry 

2 medium sweet potatoes 

1 large onion 

2 parsnips 

2 golden potatoes

oil 

1 Vitality packet 

white wine vinegar 

coconut sugar 

2 TBSP water 

salt and pepper

fresh sage and oregano 

Slice all the veggies into 1/2 inch slices and cover with oil and Vitality broth. Roast in the oven at 450 for 30-40 minutes until soft. In the meanwhile, dissolve coconut sugar in water and bring to boil. Continue to stir for 8-10 minutes until it becomes a caramel then remove from the heat. Then add the vinegar, salt and pepper and stir. Pour into a 9x13 pan and sprinkle the fresh sage and oregano over the caramel. Then tightly layer the root veggies over the caramel and then layer the onions over the root veggies. Cut the puff pastry to fit over the 9x13 and press it at the sides. Use a fork to poke holes in the pastry. Lower oven heat to 350 and cook the Tarte Tatin for 30 minutes, or until the pastry is light brown at the edges.
