We're warming up with this comforting Thai inspired soup. Chickpeas are a rich source of fiber and protein that add a creamy texture to this soup. We also added immune-boosting benefits with ginger and Grace's Goodness Broth. It's so easy to make even without fresh produce available. Our broth makes it easy to get the nutrition from vegetables anywhere.
Ingredients
1 TBSP Thai Red Curry Paste
1 can of coconut cream
2 cans of chickpeas/garbanzo beans
1TBSP coconut aminos
2 Tsp of pureed ginger
1 packet of Better Belly
salt and pepper to taste
Spicy sprouts for the topping
Method
Drain the can of chickpeas and mash them with a fork. Then add the chickpeas and all other ingredients besides the sprouts in a pot and bring to a boil. Once at a boil let the soup simmer for 15 minutes. Serve with spicy sprouts and enjoy.
