This hearty root-ful salad has Mediterranean flavors combined with yummy nourishment. It is so satisfying as a main dish or as a side....fit for a goddess...

Ingredients
1 cup quinoa
1.5 cups roasted butternut squash
1 cup roasted carrots
1 cup roasted yellow squash
2 cups bell peppers
1 cup chickpeas
Method
Cook quinoa (1 cup uncooked with 1 cup of water and tsp Immune to the cooking water)
Roasted Vegetables: Mix 1 tbsp of GGO Better Belly mixed with 3 tbsp of Olive Oil. Toss mixture over 1.5 cups roasted butternut squash, 1 cup roasted carrots, 1 cup roasted yellow squash, 2 cups bell peppers.
Cover vegetables and roast for 30 minutes, Bake 350 degrees.
Assemble Salad:
1.5 cups roasted butternut squash, 1 cup roasted carrots, 1 cup roasted yellow squash, 2 cups bell peppers, quinoa and 1 cup chickpeas.
Sunshine dressing
Ingredients
1/3 cup olive oil
1/4 cup tahini
2 tbsp lemon juice
1 packet GGO Immune
1 tsp Living Acids Hot Mustard (or your favorite mustard)
Method
Toss the dressing into the salad. Allow veggies to cool or serve warm.
