Our whole family loves gnocchi. So I thought, why not create an amazing base for it using the broths plus add all the other nourishment that my family needs. The result is outstanding. My grandson devoured it!
Ingredients
5 or 6 pieces Organic gluten free Gnocchi (I like Cappellos brand made with almond flour)
2 eggs to poach or 1/2 cup cubed tofu
1/3 cup fresh or frozen corn
1/3 cup shredded purple cabbage
1 chopped green onion /scallion
A handful of arugula
1/2 tsp miso
Directions
Boil 2 cups of water in a saucepan
Add the gnocchi, eggs to poach (or tofu)
Wait 1 minute then add the cabbage, corn and scallion
Turn off heat after 2 minutes
Add 1 packet Better Belly and miso...stir
Wait 2 minutes, stir again and enjoy!
Here is my grandson enjoy this bowl for breakfast! He said the corn and gnocchi are his favorite parts:)
