We don't want to exclude the pescatarians:)...here is a holiday favorite with an extra boost of yummy VITALITY!
Ingredients
1/2lb Mussels
1/2lb large raw shrimp
6 oz Halibut
1 large sliced yellow onion
1 large thinly sliced fennel bulb
1 bell pepper
1 cup of red wine (optional)
4 cloves of garlic, crushed
2 cans of diced tomatoes
1 can of tomato paste
2 packets of Vitality broth
1/4 cup of finely chopped parsley
salt
pepper
32oz of fish broth
Method
Saute onion and fennel bulb in oil. Once softened add the garlic, parsley and bell pepper and saute. Add the fish broth, Vitality Broth, red wine, and cans of tomatos. Bring to a boil and add the rest of the seasonings. Lower heat and let simmer for 30 minutes. Add the sea food and let simmer for another 30 minutes before serving.
