Chinese Style Tofu Breakfast Soup

Chinese Style Tofu Breakfast Soup

What better way to start your day with this yummy savory summertime soup. Vegan, light and nourishing....and of course yummy!

 

Ingredients:

16 oz water

1 packet Better Belly

2 Tbsp soy sauce

12 oz silken tofu

1 star anise

2-3 mushrooms

2 scallions

Cilantro to garnish

 

Method:

  1. Combine water, broth, soy sauce, star anise, mushrooms, and half the scallions into a medium pot and bring to a boil. Lower heat and simmer for 5-10 minutes uncovered.
  2. Add the tofu and simmer on low for another 10 minutes, gently breaking the tofu into large chunks.
  3. Serve garnished with cilantro and scallion.
