This soup has been a staple recently. The rich broth and nutritious veggies have been such a comfort. I love enjoying comfort food that also feeds my body in a healthy way. You can keep it simple with plant based or your choice of meat wontons from the store. Or you can get more adventurous and make them from scratch at home. Below is our recipe for making at home.
Ingredients:
Wontons
Wonton wrappers
1 lb ground pork or as an alternative to the pork use 2 cups of chopped mushrooms, 1/2 chopped walnuts along with all the other ingredients.
2 TBSP coconut aminos
1 tspn fresh grated ginger
2 TBSP diced green onions
1 packet of Yummy Tummy Immune broth
Method
Mix all ingredients together and spoon a teaspoon of filling into the center or each round wonton wrapper. Be careful not to over fill. Moisten the edges with a few drops of water. Fold until all edges meet and gentle squeeze the two edges of the wonton together and seal with a bit of water.

2 cups of water
1 packet of Yummy Tummy Beyond Broth
2 TBSP coconut oil
salt to taste
2 cloves minced garlic
1 Tspn sliced ginger
1 TBSP coconut aminos
1/2 cup sliced shiitake mushrooms
1 head of Bok Choy
1 Thinly sliced carrot
Method
Bring water to a boil and add the Beyond Broth packet packet, coconut oil, garlic, ginger, aminos, and salt. Let simmer and add the vegetables to soften for 5-10 minutes. Once the Bok Choy is soft add the wontons to steam until the dough is cooked through.
