Yummy in Tummy Soup
This one takes a bit longer and is really worth it! A delicate and flavorful balance of sauteed mushrooms, leeks, pea pods, cauliflower and beets...this soup is delicate and delicious.
1 medium size leek
1 cup shitake mushrooms
Handful pea pods
1 beet sliced
1 cup cauliflower broken into pieces
1/4 cup fresh basil
1/4 cup chopped parsley
1/3 cup coconut milk
1 clove garlic
1 packet Yummy Tummy Broth
salt and black pepper
In a pan sauté leek, shiitake mushrooms garlic, pea pods and parsley.
In the oven roast the beets and cauliflower with a little olive oil, salt-and-pepper at 375 degrees for approximately 20 mins until golden and tender.
While the veggies are roasting and saute,
In a pot add 2 cups of water with parsley, fresh basil and spinach 1 packet Yummy Tummy. Cook on medium, bring to a simmer for 3 minutes.
Add the coconut milk, stir then add approximately 1 cup of all the other veggies. (You will have some left overs to enjoy in your next broth!)
Cook for another minute and Voila!
