Vitality "Swedish" Meatballs (plus Vegan/GF option)
Healthy Comfort food at it's finest! Enjoy these meat or meatless options served over the potato squash mash in the recipe blog.
1lb ground lamb...or a ground veg alternative
1/2 cup of corn meal...gluten-free option... use almond meal
1 packet of vitality
Preheat oven to 400. Gently mix all ingredients together and form into balls. place on a baking sheet and bake for 15-20 minutes or until 165 inside.
This is your Beyond Mushroom Gravy just with coconut cream added:
3 cloves garlic
1 tbsp olive oil
1 tbsp rosemary (freshly chopped)
1 tsp thyme
1 tsp sage
1 tbsp parsley (freshly chopped)
1 lb assorted mushrooms (portabella, shitake, oyster, etc.)
2 packets vitality beyond broth
6 c water
1 cup of almonds
1 tbsp tamari
I can of coconut cream
In a skillet, heat oil, garlic and onions. Cook until onions are translucent. Add in sliced mushrooms, herbs and tamari. Turn heat to low and let simmer. In a blender, combine almonds, water and Vitality broth packets and mix until smooth. Pour contents into mushroom mixture and add coconut cream then stir. Let simmer with a lid on the pot for about 20 minutes. The longer it cooks, the richer the flavor! If the gravy becomes too thick, add water to thin out. Serve and enjoy!
