We had to bring this one back.....Grace came up with yet another delicious and simple way to get satisfying, nourishing and a healthy meal for you and your family.... perfect for an addition to your holiday menu as well!
Serves 2-4....with a big feast to follow...serves 4:)
1 medium-large size baked sweet potato
2 packets of Vitality Broth
3 tsp. coconut oil
1 handful raw cashews or soaked almonds
1 tbs. nutritional yeast
3 cups boiling water
Optional ingredients: Sautéed leek or green onion as garnish, a few sprigs of cilantro
If you would like, you can stir fry some collard greens for extra sources of vitamin A and leek or a shallot.
Bake sweet potato on 375...about 1 hour
Blend all ingredients in a blender until creamy
Garnish if desired
