Roasted Fennel Rice

This is a great meal to make without adding the water yet. You can add it all to a bowl and take to work and then just mix in the hot water. 
Ingredients
Drizzle of Avocado oil 
1 sliced fennel bulb 
1 cup of zoodles 
1 packet of Immune broth 
2 cups of water 
2 cups of cooked rice 
1/2 lemon juice 
Method
Heat a skillet and add the avocado oil and sliced fennel. Once softened add the water and broth and bring to a boil. Once at a boil, lower heat and add the rest of the ingredients. Cook for 10 minutes or until all the ingredients are cooked through. You can add the fennel greens on top for added nutrition.
