2 cloves garlic, minced
2 cups mixed mushrooms, thinly sliced
1 cup water
1 packet Vitality
1 Tbsp soy sauce
1 tsp vegan Worcestershire sauce
Dash of liquid smoke
Salt and pepper to taste
2 6-inch sandwich rolls or baguette sections
- Cook onion with 1 Tbsp oil over medium heat until caramelized (about 20 minutes). Add garlic and cook another 2 minutes. Transfer to a plate.
- Cook mushroom pieces with 1 Tbsp oil over medium until lightly browned (about 10 minutes).
- Return onion mixture to skillet, add water and broth packet, soy sauce, Worcestershire sauce, liquid smoke, salt, and pepper. Bring to a boil and let simmer until liquid is reduced by half (about 5 minutes).
- Remove the onions and mushrooms from the liquid and spoon onto open bread rolls. Pour leftover cooking liquid into small dipping bowls to serve with sandwiches.
