Chinese Style Tofu Breakfast Soup

What better way to start your day with this yummy savory summertime soup. Vegan, light and nourishing....and of course yummy!

 

Ingredients:

16 oz water

1 packet Yummy Tummy

2 Tbsp soy sauce

12 oz silken tofu

1 star anise

2-3 mushrooms

2 scallions

Cilantro to garnish

 

Method:

  1. Combine water, beyond broth, soy sauce, star anise, mushrooms, and half the scallions into a medium pot and bring to a boil. Lower heat and simmer for 5-10 minutes uncovered.
  2. Add the tofu and simmer on low for another 10 minutes, gently breaking the tofu into large chunks.
  3. Serve garnished with cilantro and scallion.
