Do you love tomato soup? This one is hearty, warming, loaded with flavor and oh so satisfying for a springtime evening or lunchtime meal. Everyone will love it!!
1 broccoli crown, minced
5 cloves garlic
1 tbsp minced ginger
1/2 cup diced parsley
1/2 cup freshly diced basil
1 large can of crushed tomatoes
2 packets Immune Broth
2 tsp nutritional yeast
2 tbsp organic cashew milk
2-3 c water
1 tbsp extra virgin olive oil
In a sauce pan, pour olive oil in , and add garlic and shallots. Stir until they begin to sizzle and turn heat to low. Add in parsley, basil and minced broccoli. Next, add In tomatoes. Turn heat up to medium and add in water. Bring to a boil. Add in cashew milk. Add broth. Stir until broth dissolves and turn heat down to low. Add in the nutritional yeast, salt and pepper. Let simmer for 10 minutes.
Serve alone or with grilled cheese!
