Beyond Spanish Rice
Enjoy this delicious Spanish style rice with savory spices and Beyond Broth that takes it to new yummy levels!
- 2 tbsp olive oil
- 4 cloves chopped garlic
- 1 diced onion
- 1 cup organic white rice
- 1 packet of your favorite variety of Beyond Broth
- 2 freshly diced tomatoes
- ½ tsp oregano
- 2 tbsp chopped parsley
- Salt to taste
Bring 2 cups of water to boil. Add in 1 packet of powdered broth. Set aside
In a frying, heat olive oil. Add 1 cup of rice and onion to the pan. Mix until browned.
Add in the broth and the remaining ingredients. Mix with a wooden spoon. Bring to a boil and let simmer on low until the rice is cooked to your desire. (Approximately 35 minutes).
Cool and serve as a delicious side of your choosing.
Using organic chicken thighs, coat in a dry rub with paprika, garlic, chili powder, salt and a dash of cayenne. Sear chicken on both sides in oil.
Place in a baking pan filled with 1 cup of beyond broth and cook in the oven at 375 degrees until you can’t see pink at the bone and the juices run clear, about 30 minutes.
When chicken is finished serve with Beyond Spanish Rice.
